Crown Roast of Pork for Christmas Dinner

 
We realized at 3:30 on Christmas day that we hadn't done the shopping for our meal. As we ventured out to find groceries, we learned that everyone went home at 3:00 on Christmas afternoon. We had to Iron-Chef-it and make due with what we had for side dishes for our meal. We did pretty well for ourselves with curried apples and pears to go with the pork, Israeli couscous with currents, mashed potatoes, my mom's homemade rolls and canned corn. Ok, so we only fell off with the canned corn, but everything else was wonderful!
